It is the flagship species of cheese for Greek exports, beating constantly new markets around the world.
The first references for this Greek cheese, come from Homer and the Odyssey. According to legend, the Cyclops Polyphemus was the first 'producer' of this particular cheese. Carrying milk daily from sheep in animal skins, found surprised that after days, milk clot and was solid and eatable.
Nowadays, feta is produced in almost the entire country, made exclusively from sheep's milk, or a mixture of sheep's and goat's milk which does not exceed 30% of the mix.
It has a salty taste and stored in liquid brine for about 3 months. Characterized into hard and soft. Its flavour is formed together with the salt, the milk quality and of course the ardent desire of the Greeks cheese makers!!!
