Metsovone is the famous semi-hard smoked cheese which is produced in the region of Metsovo.
It is manufactured from cow's milk or a mixture of cow and sheep or goat milk.
Smoked by hanging, wrapped in ropes, while matures over a period of approximately three months.
It is called also "cheese of the kings" because even the first cows were from Switzerland; later cows came from the stables of Elizabeth of England in Metsovo and had names of queens of England.
